During Medieval times, bread was baked in stone or brick ovens, fired with wood. They didn't have yeast in packages, but yeast is all around us in the air. Medieval people mixed their dough and let it rise using these natural yeasts. This method took a great deal longer, of course,

I believe pan breads were popular during the middle ages in Europe. A yeast bread cooked in a pan over a fire. English muffins are a modern-day descendent of these. The sandwich chain Schlottsky's uses a bread that may be quite similar to medieval pan breads.
Yeast breads have been made at least since ancient Egypt. I don't think they went out of style during the middle ages.

Stone ovens as flat bread. They didnt use yeast so they didnt need pans for the bread to rise.

this site is interesting gives a lot pf recipes from medieval times from all over europe..of course our ingrediants are not made the same way anymore..eggs are standardized, most flour is processed more now.
