Coming from New Zealand - definitely lamb. I like all the others too, but not all cuts of the certain meat - crazy huh? One of my favourite ways to cook a lamb leg.

Leg of Lamb with Rosemary

¼ cupHoney
2 tablespoonDijon style mustard
2 tablespoon Fresh chopped rosemary
1 teaspoonFresh black pepper
1 teaspoonLemon zest (with a dash of lemon juice, balsamic vinegar) (May also add a little red wine or red currant jelly)

3 clovesgarlic minced
2kg approxLeg of Lamb

1.In a small bowl combine honey, mustard, rosemary, pepper, lemon zest and garlic. Mix well and apply to the lamb. Cover and marinate in fridge overnight . I did mine for about 6 hours and it turned out fine.

2.Preheat oven to 230– 235C (445 - 455F).

3.Place lamb on a rack in a roasting pan and sprinkle with salt to taste (not necessary). Cover loosely with a foil tent. You may add 1 – 2 cups of water to the pan.

4.It is recommended to use a thermometer. Bake at 230– 235C (445 – 455F) for 18 minutes, then reduce to 175 – 180C (345 – 355F )until thermometer reaches the desired temperature.

Meat Temps
42C is rare (107.6F)
58 C medium-rare (136.4F)
68C medium-well done (154.4F)

Cooking beyond this temp will dry the lamb and make it tough. Don’t let the thermometer touch the leg bone.

Note:
Use water from roasting pan to make the gravy after skimming off any fat.

Beef - chicken - pork - seafood - no lamb. The news has been talking about imported seafood from China being raised in sewage ( yucky ), so I haven't been eating seafood and won't for awhile. I have had lamb a couple of times but have never liked it.

Beef over lamb, just because I have never eaten lamb...

Chicken over seafood, because I am allergic to most fish...

And Pork over seafood, because pork is good!

depends how it is cooked... beef and lamb first, then pork, then chicken... seafood comes into heaps of places though, for instance I'd have a moreton bay bug or some salmon or tuna sashimi over a steak any day, but prawns come in after chicken... fish, if it's battered and fryed before chicken, but not fryed comes after...
