Because certain beliefs become embedded in people's identity. To contradict that belief is felt as an attack on the identity since the identity is so tie up into the belief, even if it is flawed.
In cases such as these the person will defend the belief as vigorously as he would defend his life since the ego is at stake in this matter. In the interest of self preservation the ego will pull out all the stops to protect itself just as an animal or even a human will pull out all the stops to defend their own life.

It's an automatic defense mechanism. They don't have any other plan to get them out of trouble, so they just continue to lie. They don't know what else to do.

I don't know. Life is hard enough without doubting the words of our friends. Honesty is important to me. I am not always completely honest, I am no saint, but what you see is pretty much what you get.
