I serve meatloaf with mashed potatoes and green beans or another veggie. Here's my version of meatloaf.

1 1/2 pounds ground chuck
1 onion, chopped
2 ribs celery, chopped
2 cloves garlic, chopped
2 eggs
2 tbsp. Worcestershire sauce
5 dashes hot sauce
2 tbsp. ketchup
Breadcrumbs for binder
Salt, pepper, dry mustard powder and dried thyme to taste.

Preheat oven to 350 degrees. Place onion, celery, and garlic in skillet and saute with olive oil for five to seven minutes until translucent and tender and cool briefly. Meanwhile, place all other ingredients into a large mixing bowl and add in the cooled, cooked vegetables. Mix meatloaf mixture together well while keeping it light in texture. Place all of the mixture on a greased roasting pan and shape into a loaf. Meatloaf cooked this way ensures the fat can drip out and that the exterior gets a nice crust in the oven all around. Place in oven and cook for 30 minutes. After 30 minutes, take out meatloaf and cover with more ketchup. Cook for another 30 minutes or longer depending on the the thickness of the loaf made. Slice and serve with mashed potatoes and veggies.

Make sure You have all the ingredients.before you get started that will make you less frustrated when you are ready to cook.

1lb of fresh hamburger
2 Eggs
3/4 cup of Quaker Oats
1 can of tomato soup (Don't use catsup it will ruin the taste)

Preheat The Oven at 350 degrees In a small bowl crack 2 eggs and stir with a fork set aside. In a large bowl add the hamburger , eggs, Quaker Oats and 3/4 of the tomato soap (Don't add water or milk to the soup) . Mix all together and put the mixture into a loaf pan, spread the rest of the container of soup onto the top of the meatloaf.

Bake in the oven for about 50 minutes until it turns brown
on top.

I always have baked potatoes with sour cream and cheese a little bacon bits on top for vegetables I have green peas, plus warm french bread.

I always use the microwave for Baked Potatoes about 2-3 minutes per Potatoes. Never bake more than three potatoes at a time. Always indent the potatoes with a knife or a fork before microwaving, or the potatoes will burst in the microwave. (If you want to have fun with this don't poke the potatoes at all and tell your friends to keep a eye on the potatoes and watch them jump when the potatoes explodes it is really a knee slapper, of course this experience will tell you if they're really your friends.)

Meatloaf was invented to use up scraps of leftover meat.
So almost any combination of cooked meat will work.
You'll need a meat grinder though, which is rare.
These days people tend to buy fresh ground meat.
I like a combination of ground beef & sausage meat.
These should be browned first in a skillet with oil & onions.
You could substitute or add chopped celery.
Then mix in a bowl with breadcrumbs for texture.
I understand oatmeal or cornflour work too.
Pack this mixture into a loaf pan, & bake at 300F.
Check with a meat thermometer for well-doneness.
Quantity will determine the total cooking time.
You can also make some sauce to pour over it.
Use a brown gravy mix or some tomato sauce.
Mashed potatoes is the traditional side-dish.
But you could make scalloped potatoes easily.
Almost any vegetable would go well with this:
green beans, peas, baked beans, carrots, corn, etc.

I have an italian meatloaf recipe that I use all the time.

Aout 2lbs. of lean ground sirloin
1 cup of bread crumbs
1 egg, beating not necessary
1 half diced onion
2 cloves of garlic minced
1 tablespoon dried or fresh basil
1/3 cup of provolone or mozzerella cheese
Either 1 cup of ketchup or quality barbeque sauce
Combine all of the ingredients in a bowl and mix with your hands. Place on a greased baking sheet, shape into what a normal meat loaf would look like, typical rectangle shape. Cook in a preheated oven at 350 degrees for one hour. Oh, I almost forgot, before cooking, spread the ketchup or barbeque suace over the meat loaf. When done, you can check it wifh a thermometer, it should read 160 degrees.
To serve with it, I would suggest garlic mashed potatoes and some fresh asparagus! My husband loves it!

All the above recipes sound great. But for adding an extra fancy touch, check out the link below. The idea is to cook the meatloaf till almost done, then cover it with overlapping pieces of ready-to-heat crescent roll dough, such as Pilsbury, and return to the oven for final baking. If you try this, I would also recommend brushing the dough with beaten egg yolk before returning the meatloaf to the oven. This will add a shiny gloss to the crust and make it even more special. This recipe is a cheap, quick variation of Beef Wellington. Even new cooks can impress the heck out of their guests with this.

This is a recipe from a 1955 cookbook---right at the peak of meatloaf making!
2 lbs. ground beef
2 slices of bread, torn into small pieces
1 small onion, diced
2 eggs
1/2 of a small can of tomato sauce

Mix all together and form into the shape of a loaf in a 9x13 glass or metal baking dish.
Bake at 375 degrees for 45 minutes, pour sauce (recipe below) over the top and sides and bake for an additional 30 minutes! This makes a big meatloaf and it's delicious with some bowtie pasta on the side covered with the sauce from the meatloaf. I like to serve fresh spinach with it, but serve whatever veggie you like. Makes AWESOME meatloaf sandwiches the next day, using leftover sauce as you would ketchup. YUM

Sauce:
Mix the remainder of the tomato sauce plus another full can of tomato sauce, 1 tbsp. of yellow mustard, 1/4 cup of cider vinegar, 1/4 cup of brown sugar and a a few dashes of Worcestershire sauce together in a bowl.
If you like lots of sauce you can double the sauce recipe!

I just found out about a Mexican meatloaf, you put your hamburger in a bowl, add a can of rotel, add small chunks of Velveeta cheese, seasonings,crunched up tortilla chips,mix well, put it in your pan and shape,cover with tin foil, bake at 3'50 for 45 min.(depending on how big of a meatloaf you are cooking)or until almost done ,the last 10 min,uncover and add thin slices of Velveeta cheese and pour salsa over the top.I serve it with a green salad

1.5 lbs of hamburger meat, lean
1 egg
lots of garlic, minced
an onion, diced
2 slices of bread, cubed and soaked in milk
whatever spices you have on hand, salt, pepper, seasoning blends etc

Mix everything together, don't over mix, you don't want every bite to be identical. Shape in a loaf pan lay a few slices of bacon on top. Bake at 375 until cooked through. Serve with mashed potatoes and brown gravy, or before baking cover it with crushed tomatoes and use that as your sauce.

i use the ground round, an egg, some bread crumbs about 1/2 cup, teaspoon garlic salt and teaspoon season salt and mix together you can also add either dry onions or chopped fresh onions if you like onions...mix all ingredients together and form into a football shape place in a loaf pan and bake at 350 degrees for 45 minutes...serve with gravy, mashed potatoes and corn

if you want down home comfort food, then take a pound of ground beef, not really lean or you wont get the great taste, a quarter of a cup of bread or cracker crumbs, an egg, salt and pepper to taste, a splash of worcestershire sauce, a teaspoon of garlic salt, or powder and mix together well, place in a greased loaf pan, top with catsup mixed with finely chopped onions and bake at 375 for about an hour, serve with really creamy mashed potatoes, sometimes i cheat and use the frozen ones, and i like glazed carrots or sauteed green beans with this dish..........its easy to make, its satisfying, its comfort and yummy
