any recipe is fine as long as it's not too complicated and time consuming...

One Pot Chops = 30 minute menu

2 cloves garlic minced
2 tsp. crumbled dried rosemary
4 pork loin chops trimmed
2 tsp olive oil
1 red onion sliced
1 cup converted rice
1 each-sweet red and green pepper chopped
pinch salt
1 1/2 cups chicken stock
1/4 cup olives (preferably Kalamata) quartered

Sprinkle Garlic and half the rosemary all over the pork chops. In a skillet, heat oil over medium heat, cook chops, turning once, for 8min. or until just a hint of pink remains inside. Remove to a plate.

Add onion to the pan, cok, stirring often for 3minutes or until softened. Add rice, stirring to coat, Add red and green peppers, salt and remaining rosemary.

Pour in stock and bring to boil. reduce heat, cover and simmer for 20minutes or until rice is tender. Arrange chops on top, cover and cook for about 5minutes or until heated through. Sprinkle with olives. (makes 4)

One Pan Potatoes and Pork Provencale

4 medium potatoes cut into 3/4 " cubes and microwaved 6-10min until tnder
1 Tbsp. veg. oil
1 lb. lean pork cut into thin strips
1 cup cherry tomatoes
1/3 cup orange marmalade
2 Tbsp. Dijon style mustard

While potatoes cook, heat oil in large skillet over high heat. Add pork and toss until opaque. Drain . Add potatoes and tomatoes , saute and toss 3 min. Add marmalde and mustard , toss until marmalade is melted. Season with salt and pepper.

Newyork cheesecake squares

1 1/4 cups honey maid graham crumbs
1/4 cup butter melted
4 pkg philadelphia cream cheese, softend (250g ea)
1 cup sugar
3 tbsp. flour
1 tbsp. vanilla
1 cup sour cream
4 eggs
1 can cherry pie filling (540ml)

Preheat oven to 325F . line 13x9 inch bake pan with foil, with ends of foil extending over sides of pan. Mix graham crumbs and butter, press firmly onto bottom of prepared pan.

Beat cream cheese, sugar,flour and vanilla in large bowl with electric mixer on med. speed until well blended. Add sour cream, mix well, add eggs, one at a time, mixing on low speed after each addition just until blended. Pour over crust.

Bake 40-45min or until centre is almost set. Cool completely. Refrigerate at least 4hrs or overnight. Remove cheesecake from pan using foil handles. Top with pie filling before serving. Store leftover cheesecake in refridgerator - Makes 16 squares.
(to bake this cheesecake in a 9" square pan or 9" springform pan, prepare batter as directed, using 3 eggs, reducing cream cheese to 3pkg. and reducing sugar and sour cream to 3/4 cup ea. Keep measures of all remaining ingredients the same. Pour over prepared crust. bake and refridgerate as directed.

This is what my husband ALWAYS asks for. It's a Swiss pasta dish--easy, but elegant and rich. If you can get cheese ravioli, you're good to go. Just right to serve two. Ravioli Gratin --10 to 12 ounces cheese-filled ravioli --1/2 tablespoon butter, plus enough to grease the baking dish --1 garlic clove, crushed (not minced) --1/3 cup off-dry white wine, like Gewurtztraminer --1 cup heavy cream --salt and pepper to taste --pinch nutmeg --1 tablespoon chopped parsley --about 1 cup coarsely grated Swiss cheese (use Gruyere if you can get any, but Swiss will work fine) Bring a large bot of salted water to a boil and cook the ravioli until al dente; drain. Meanwhile, butter a baking dish. Heat the rest of the butter in a saute pan until foamy; add the garlic clove and toss it around for about 3 minutes until it's toasty brown on the outside. Then fish it out and discard it. Preheat the broiler. Turn the heat to high and add the wine. Let it bubble away for about 30 seconds. Add the cream. Boil until thickened, stirring, and season with salt, pepper and the nutmeg. Stir in the parsley. Gently fold in the cooked ravioli, turning to coat them with the sauce. Spoon them into the baking dish in 2 even layers; sprinkle about 1/3 of the cheese in between the layers, and sprinkle the other 2/3 evenly over the top. Broil until bubbly and edges of a few of the ravioli are starting to crisp and brown, about 5 minutes (watch carefully). Fettichinne Alfredo

1 pint heavy cream
1 stick butter
1/4-1/2 cup shredded parmesean cheese (to your taste)
1/2 tsp coarse black pepper
3/4 tsp garlic powder
4 ounces philidelphia cream cheese
1 pkg fettichinne

Melt butter and cream cheese in sauce pan...dont burn..use low heat
add heavy cream/garlic powder/pepper....simmer simmer simmer
prepare fettichine...according to directions
add parmesean cheese to sauce about 10 min before serving..it will thicken it.

good just like that...but you can add in chicken or bacon or italian sausage......and top with diced tomatoes and chives and avacodo slices or chunks.
