I would go with red wine.

I could have considered vodka with coffea flavor, but I think it would be too much stimulating and "it won't flow well with the food."

Or shampaine?

I would choose red wine to go with pasta dishes..but you could also have a white wine as some ppl don't like red wine. Always keep the red wine room temperature...do not put in fridge to chill. When at the wine shop or liquor store you can ask what suggestions they would recommend and let them know what pasta dish you're serving.

The rule of thumb is to serve red wine with meat sauce and white wine with any other.

white or red doesn't matter. Italian wines go really well with all types of pastas. Try these grapes: grillo (similar to Pinot Grigio), Pinot Grigio, Gargenega (whites), Chianti, Nero d'avola, Sangiovese (reds). Trying different wines with food is a fun adventure. Its all up to your own tastes.

usually with pasta dishes a white wine, such as chardonnay, is most agreeable. Anything light colored is suitable. Pinot grigio is also a good white wine, just a suggestion.

It depends on the sauce you will use. If it is white sauce with sea food or poultry use white wine. If you use red or pink sauces with meat, use red wine.
