am trying to get ideas on carb sources for people who only eat raw foods (typically foods that have not been processed at over 118degrees)

While The Mom gave a good answer, I suggest that you either go to the Vegetarian and Vegan section on Answers and say that your question is serious and not fectious. I've not been there in awhile because of all of the ignoramouses who did not take things seriously. You could also go to www.veggieboards.com and ask. They have a raw foodists section. Also, just say that you're curious, the people there are generally helpful to non-vegs. Awhile ago, for example, there was a question on a good veg*n hot dog from somebody who was opening up a hot dog stand and wanted to market to all people. He got some good support. (I wish more restaurant owners realize that vegs might be patronizing their place. I'm a vegan married to an omni.) Anyway, I digress.

You could also maybe do a search "raw food diet" and see what comes up, too.

I also wonder if you mean protein. All fruits and veggies contain carbs, which is why I could never figure out why they're "banned" in the Atkins diet. Even when I ate meat, I couldn't figure that out as I was raised on the yumminess and goodness of fruits and veggies. (I was raised on meat, too.)

All plant matter contains carbohydrates, raw or not. Are you sure it's not protein you are inquiring about? That would be the major nutritional challenge, as far as I can see. Unless they included eggs and cheeses, the only complete protein source would be soybeans or other soy products. Although vegetarians supply protein in their diets through combining proper portions of amino acids, like beans and grains, that wouldn't be possible on a raw food diet. But carbs would be no problem at all. Carbs are just sugar, in various forms, or starches that will convert in the body.
