I've always found it bizarre. Where's the sacrifice in causing something else's suffering and death? A real sacrifice would be cutting ones own throat.

Well first, the idea comes from the Bible.
The fact that killing people and animals do not make God love you more. It is the state of repentence. Back in biblical times, when one disobeyed God, they sacrificed as close as a perfect animal that they can find. But when Jesus died for all of mankind, God planned it out so that we didn't have to sacrifice animals anymore because Jesus IS perfect. Not 'as close as you can get to perfect' but absolutley perfect.

Get yourself a New Living translation of the Holy Bible, which is written in plain modern English, easy enough for even you to read and understand, and find out for your self the truth. Jesus died and resurrected. He is very much alive.
Killing animals was in the Old Testament.
If you accept Jesus into your heart, you will get eternal life.
