I've heard the calories in/calories out theory as well as eat less/move more...wouldn't that mean that overexercising and undereating would work?

Undereating would slow down your metabolism, but I'm not sure about overexercising. Exercising would speed it up.

Well, under eating is really not the best thing to do, because you want to have enough nutrients in your body. On that same note, you want to have enough calories in your system to be able to exercise without getting dizzy or feel faint.
What happens when you "under-eat" is that your body stores extra fat because it feels you aren't going to feed it again anytime soon. So, in a sense, yes that slows metabolism, but in an unsafe way. The best thing to do if you're looking to lose weight is do plenty of cardiovascular exercises and make sure you stay away from saturated and trans fats. Look at the food labels of food you're consuming and make sure you don't consume over 100% in the following catgories in one day: Cholesterol, total fat, saturated fat, sodium. This is not to say you can't enjoy your favorite sweet foods, just make sure you eat them in moderation.
Prior to working out (whatever that exercise may be) I suggest eating a high carb meal about an hour beforehand to give your body energy to work out. I also suggest taking a bottle of juice for while you work out to give you small energy spurts along the way.
Good luck.

when you over exercise and under eat your body thinks that you are starving and it holds on to the food to try to nourish the body. That's what slows down the metabolism. What you're thinking will not work it will just cause you to screw up your entire metabolic system.

Exercising sensibly and eating small frequent meals is one of the best ways to lose weight. Anything else is not going to be successful in the long term.

Yep, that's true. When you undereat, your body goes into "starvation" mode and tries to hold on to everything it can get so everything slows down.
