Depends what you like to do.
There's a lot.
Clubs, concerts, museums, Old Sacramento, river rafting, nudist resort, baseball, NBA, car culture, outdoor sports galore. Boating and water skiing on Folsom Lake. On July 14th, is the monthly 2nd Saturday Art Walk in downtown Sacramento until 9pm. Galleries are open, food, live music, shows.
Lots of good restaurants and shopping.
You're close to skiiing, camping, hiking, the Pacific, beaches, wineries all over the place.
You gotta be a very dull person, not to find something to do in Sacramento.

I used to have to go to do an audit in Roseville, the other auditor and I would go if we could once or twice for dinner to Mikuni Sushi on Hazel Ave. in Fairoaks just 5 minutes off the freeway. No. 9 on the link below. The last time was in 1998. Ten years later, the place probably has grown and from the reviews still the same. I am japanese american and the fish was good, the sushi rolls they are tasty and great to eat. It is a party place. Lots of locals and lots of repeat customers. I would still go there if I was in Sacto area. And my cousin who lived in Sacramento used to go there till he moved back to the City, San Francisco. We used to be there from Thursday to Saturday and it was usually busier on a Thursday night than a Friday night. Never figured that out.
The other sushi restaurants on the list sound good too.

Will you be going to Downtown, or staying in Folsom? Old Folsom's really cute, and there's also great outlet shopping there.
If you'll be going downtown, go to sushi at Nishiki on 16th. Mikuni's good, but always packed.
I've heard good things about Taiko sushi in Folsom, but I've never been...

There is nothing to do in the Sac town area. Sorry but prepare to be bored. The only thing Folsom is known for is it's prison.
However San Francisco is only a 2 hour drive away, head there and have fun. SF is one of the best "food" cities in the USA (along with NYC and Chicago) and full of nightlife. Plenty to see and do, you will be happier there.
