Gift cards are not impersonal. Buying someone something they don't want is impersonal. Gift cards are just smart. I, personally, LIKE to get gift cards. But you know your mom better than we do. Maybe instead of wasting your time here you should be out getting something.

Well you don't realy have time to make her anything. A giftcard from a store may not be a good idea, but maybe a gift card/voucher for a spa/ nail salon would be better.

flowers and a walk in the park spending time with her, stop for some ice cream and just enjoy each others company. have fun and let lifes worries wait. showing her you love her by spending time with her will mean alot to her.
