You tried this more than once right?
To teach an animal what you don't want them to do you need to be consistent. It won't work right away, they need to get it into their heads that this unpleasant thing is going to happen whenever they do a certain thing, so in the end, they won't do it. So keep it up! If the squirting doesn't make him jump down, pick him up with a sharp no and PUT him on the floor, or shoo him away. He'll get the message in the end that it's just not worth it to jump up if he's going to get hassle everytime - cats like to be hassle-free.

Try putting out aluminum foil or double sided tape...they don't like that at all. But it might be difficult on such a large surface. There are also some ultrasonic devices that let out a really high-pitched sound when the cat enters a certain area.

Push him off, plain and simple, don't pick him up and then put him down, he now thinks this is a game - our cat did the same, but realised it wasn't by the third time she jumped up just to get swept off.

Well what I did when my cat did that was I would yell at him and give him a pat on the butt and say firmly no and then if he stayed off the table i would reward him and give him praise

try putting things on the edge of the counter, like empty soda cans are plastic bottles, so when he jumps up, they fall all over the place, it will probably freak him out and he'll stay away
