Aside from the usual toppings for mashed potato. Do you have any suggestions for a sauce that goes well with mashed potato as toppings?

Can't your bright color be a bright colored vegetable? An Italian sauce wouldn't go with the mashed potatoes, so you can't use that. It'd consider an oliveoil, butter and fresh garlic sauce, that that's not colorful. How about adding red & green, or red & yellow pepper. Seed the whole pepper, then cut thin slices across so you have the pretty roundish shapes of the pepper, instead of slicing downfor strips. They'd make a nice presentation either on the side or on the chicken. Then just crush some fresh garlic. Add the garlic and some nice herbs, to put over the chicken. If you can afford a few pieces of fresh basil or flat-leaved parsley, that's nice sprinklin over all to finishoff the presentation. Good Luck. Sorry, can't think any sauce that's colorful and works with the mashed potatoes. If you were serving an angelhair pasta instead of the potatoes, that would be dfferent. But Iwould think the peppers would work for color. One other suggestion would be to make the garlic sauce and use seeded, chopped tomatoes in it to add color instead of the peppers.

I like them topped w/ some Shredded Cheddar Cheese and Sour Cream. I love Mashed Potatoes and make them all the time, I eat the leftovers as snacks and when I do that I eat them w/ Ranch Dressing.

There are many, with the obvious being a beef or chicken gravy. What you may want to try, however, is adding new flavors to the potatoes, such as wasabi and cream cheese, or Vegeta and heavy cream. You may also want to appease your sweet tooth by covering your mashed taters with a simple balsamic reduction, or a red wine reduction.

Well, its not really a sauce but I love having mild to medium salsa on my baked potato so maybe it would work on mashed potatoes. Also gravy works well too.

famous rays barbque sauce. everytime i make mashed potatoes i use a little mayonaise in them w/ butter and milk. Then put 2 tablespoons of this famous rays barbque sauce and the mashed potatoes are amazing!!!! everyone loves them.

I've become a big fan of bacon gravy.

2 Tbsp cold bacon drippings/fat
4 Tbsp butter/marg
2 cups beef broth or au jus

It's incredible!

I can of cream of mushroom soup and 1/2 cup beef broth. Mix, heat, and serve over potatoes

try a simple white sauce take a little bit of butter and flour make a paste slowly stir in milk and a little salt and nutmeg to flavor and there you go its awesome
