Meatloaf. I worked as a farmhand the last 5 summers, I think I was 14 when I started, and my boss's wife made the best home cooked meals everyday. Her meatloaf was definately the best. Im gonna miss that meal more than any now that im not working for them.

My favorite home cooked meal of all time is a spanish dish called Sancocho de Gallina it basically a very complicated stew and when my mom would make it all of my family would come over, so it just a nice childhood memory I guess.

This:
Ingredients:
* 400 g Lamb, minced
* 35 g Breadcrumbs
* 2 tsp fresh Basil
* 1 tsp fresh Oregano
* 1 tsp fresh Thyme
* 1/4 tsp Chilli flakes
* 1 large Egg
* 1 medium Onion, finely chopped
* 2 cloves Garlic, finely chopped
* 3 tbsp Olive oil
* Salt and Pepper
Method:
* Mix lamb, onion, garlic, herbs and egg together in a large ball using your hands.
* Gradually add the breadcrumbs to the lamb mixture and mix well.
* Shape the mixture into meatballs and leave to chill for at least 1 hour.
* Fry meatballs in the olive oil over medium heat for 10-15 minutes. Turn the meatballs around occasionally to ensure its brown all over.
* Remove the meatballs from the pan and rest on kitchen papers to absorb the excess oil.
* Serve the meatballs with basic tomato sauce and pasta.

I try alot of recipes from Rachael Ray. I tivo the show so I can watch it all the time. I love to cook, and the recipes always turn out. So my favorite meals are the ones that turn out like they are supposed to.

Down here in southern Louisiana in bayou land, we cook a chicken stew and make with it a pot of rice and we have sweet baby peas and we make potato salad. That is my favorite meal and for dessert we make either homemade chocolate cake or peach cobbler. Well - my family makes this anyway and we love it.

My chile Verde w/ spanish rice & pinto beans (de la olla) meaning from the pot along with my homemade flour tortillas.
Why? Because everything I use is fresh and it is absolutely DELICIOUS!! No one else makes it quite the way I do. My family and friends just love it.

Vienna Beef Hot Dogs, Velveeta Shells and cheese and Peas and Carrots all mixed together. It is a large hit with everyone in the house because it is comfort food to them. I myself would rather make my grandfathers beef stew receipe that he used to cook for the sailors on the battleship in World War II it just brings back memories for me as a kid with him.

fried chicken served with homemade macaroni & cheese, biscuits and lemonade. It is my favorite because it is one of my mom's bests and since having moved away from the south to come to Michigan I don't have it as much anymore. And NO ONE cooks fried chicken better that mommy!
