I marinate over night in the refrig.
Same goes with meats and poultry.
Though I think with lemon juice, you need to be careful being it is an acid and probably rot the item overnight.
30 mins is fine for fish.

lemon is acidic. It will actually break down fish over time and make it less firm...and mushy when cooked. I wouldn't suggest marinating fish at all in lemon juice. Instead, I would use it during the cooking process so you have the flavor without losing the texture. If you MUST marinate...I'd say no more than 10-15 minutes.

Depends on how you are cooking it. Usually not too long as straught juice will tend to pickle it. The Tahitians have a raw fish coconut & lemon juice recipe that's different. Lemons also tend to be bitter so don't leave it for too long. Add some spices , lemon , garlic butter or cajun red types. Grill, poach or sear lightly. Remember to under cook some what as fish will cook itself after you take it off the heat. Light and fluffy prefered to rubbery. Good luck! (lemon pepper seasoning in your butter & lemon also delicious) Squeeze lemons to taste after.

The smaller the pieces, the faster it cooks. Whenever I've made a tuna ceviche recipe, the tuna has turned white (ie cooked) in one hour. My tuna pieces are usually 2cm cubes too. I usually toss the tuna with freshly squeezed lemon juice in a glass dish, then cover the dish with plastic wrap and leave it in the refrigerator. Add chilies, garlic, red onion, cilantro, parsley, and anything else you like for flavor, and serve with crackers or on a bed of crisp lettuce. Sometimes I like to use crab, shrimp, tilapia etc, but of course the fish has to be high quality and very fresh for the best results.

You can make Ceviche and leave it there all night. The lemon juice will cook the fish. And you add other stuff like tomatoes and chillies. I'm not sure what fish they use.

30 to forty min.s is fine but you'll have to remember to mix it gently a few times. I sometimes leave overnight.
Sometimes I marinate with plain white vinegar then drain the fish (from the vinegar) well and then add my lemon or lime.

I'd use something to go with the lemon, because the acid in the lemon is going to start to cook the fish if you marinade it too long.

Marinade your fish for only 30-60 minutes before cooking/ grilling. Because of their lack of connective tissue, fish absorbs marinades easily. Do not over marinade or the flavors may overpower the flavor of your fish.
