This is the way my Chef taught me. Cut off both ends and stand it up. Cut off the outer skin by going top to bottom. Then cut it down the middle. You'll be able to see the core. Make 2 'V' cuts to remove the core in each half. Then you can cut it however you want.

Lop off the green part and the bottom (so it sits nice and flat on your cutting surface). Shave the skin off the flesh cutting from the top of the pineapple to the bottom and going all the way around in a circle. Either use a corer to get the tough pith out of the middle or cut it into quarters and cut the pith out that way.

First cut off the top and stand it up, then take a large knife and cut as close to the hard part in the middle as you can. Then cut the peel off by slicing between the peel and the fruit. Finally cut the fruit into chunks and enjoy. (you can cut mangoes this way too) (Be very careful cutting the peel off.)

Alot of kitchen supply stores sell pineapple cutters/corers. You just cut the top and bottom off and then place the cutter on the pineapple and slide it down. Farberware sells them for about $3.

I cut both ends off, Then slice the peel off into
long strips from top to bottom.
Then I cut long slices from top to bottom to cut it off the core. Then cut it up as desired.

I do it differently. I cut the peel off leaving the "eyes" on (the darker color parts). And then, I cut diagonally to make "ditches" to get the eyes off. You can repeat to get a pretty pattern. Pretty and delicious.
