A lot is going to depend on what "ingine"/motor you are running (ac /dc etc)
With need to be able to control the a amount of power and/or the frequency of the supply to the motor so that the vehicles speed can be controlled.
Most systems use an electronic control box to regulate the power supplied to the motor. Control boxes include things like power mosfets, power transistors, Insulated gate bipolar transistors (igbt).
Three phase ac motors are the most efficient. The controllers for these are quite sophisticated. Most electric power supplies are dc. The controller needs to be able to simulate a three phase variable frequency supply to drive these.
And yes quite thick copper cable is used between the battery, the controller and the motor.
A good source for a system to drive a car.

Actually, most electrical power sources are AC. Because most electrical energy is that which is used in your home.
However, ALL PORTABLE electrical power sources are DC. That is why the electric car, and hybrid runs on DC.

Big fat wires are needed to connect the battery to motor because of the high current demand. It is more like plumbing than normal electrical wireing :)
