Here is a basic pancake recipe:
INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Chocolate Chip Pancakes:
INGREDIENTS
2 cups all-purpose flour
1/4 cup sugar
2 tablespoons baking powder
1 teaspoon salt
2 eggs
1 1/2 cups milk
1/4 cup vegetable oil
1/2 cup miniature chocolate chips
CINNAMON HONEY SYRUP:
1 cup honey
1/2 cup butter or margarine, cubed
1 teaspoon ground cinnamon
DIRECTIONS
In a bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk and oil; add to dry ingredients and mix well. Stir in chocolate chips. Pour the batter by 1/4 cupfuls onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep warm.
Combine the syrup ingredients in a 2-cup microwave-safe bowl. Microwave, uncovered, on high until butter is melted and syrup is hot, stirring occasionally. Serve with pancakes.

Can't get any simpler than this. I am assuming you know pancake batter is not thick. It pours. It is not to be as thin as water. (crepe batter is about that thin)It is ok for the batter to not be extremely smooth.Don't over beat the batter. Beat the eggs until well mixed. Beat two eggs. Have a cup of milk ready. Use self rising flour. This will take probably a cup of flour.. Add about one half teaspoon of salt to the eggs. Add the flour and the milk alternately to the eggs until you have enough batter. Add a tablespoon of oil to the batter. Sounds simple? Tastes like pancakes when you cook in a little oil, because they are pancakes. Top with butter or oleo and syrup. (or fruit, or jam, or what you like.) Thinner you make the batter, the thinner the pancakes will be. Do not have the heat too high when you cook them. Check under them with the spatula. Cook until the top looks like there are little holes, or burst bubbles, all over, then turn them and brown the other side. If the heat is too high they will be too brown on the underside. I have been cooking since I was 12. When I was young, cooking from my husband and kids, I liked to cook. The novelty wore off, long ago. I now like to cook something good for myself occasionally. I like to cook something good for company occasionally. The pancake recipe above makes real pancakes. The difference is , if you will look at recipes, the self rising flour. It has the baking powder, etc., already in it. The other flour does not of course. You can buyr, whole wheat flour, cake flour, etc., and vary the texture of the things; or add nuts, crumbled bacon, diced apple, etc. or spices Did I hear buttermilk? Someone said buttermilk, and make buttermilk pancakes. If you use buttermilk, add a pinch of baking soda,ust about an eight teaspoon.

You will need:
* 1/4 cup melted butter (take care not to burn the butter - just melt slowly); * 1 egg; * 1 cup milk
* 1 cup apple - shredded (it is important to add the apple - this makes the pancake moist); * 1 1/4 cups self raising flour * 1/4 teaspoon ground cinnamon * 1 tablespoon white sugar
In a large bowl, mix butter, egg, milk and apple. Then stir
in the sifted flour, cinnamon and sugar. Stir lightly until combined.
Then heat a lightly oiled frying pan (that is - don't pour the oil into the pan, get a piece of kitchen paper, and using that smear some oil on the pan - there should be no oil floating around!) heat the frying pan over medium/high heat.
Pour or scoop the batter from the bowl into the frying pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I like to add a handful of fresh blueberries or cut up strawberries to a basic pancake recipe.
Also, grated tart cooking apple, like granny smith, mixed into the batter is really good.
Texture and cooking time are really important in pancakes, I always do a couple small testers to make sure I've got the batter consistancy and pan temp correct before I go into major pancake production.
Now I'm hungry...I think I'll have pancakes for breakfast too...

Go to grocery store & get a box of Low-fat Bisquick Mix !!! It is now very good. No TRANS FATS, etc. !!! The company has finally caught up with the times (pretty much).
There are recipes for: PANCAKES, WAFFLES, CREPES, ETC. on the side of every box. Using this mix makes it VERY SIMPLE to get a GREAT BREAKFAST F-A-S-T !!!!!

milk, flour, sugar, salt (a wee bit), and egg. butter the pan, place cookie cutters (metal ones pleaseeeeee--also spray them so they wont stick) in the pan, pour the batter in it, and let cook. add fresh fruit or chochoalte chips to it. remove the cookie cuters and flip. enjoy w/ favorite syrup.

go get the add water only mix,the easiest to make.then add chocolate chip and butterscotch chips.butter while on the pan still.always gets cheers from everyone who has ever eaten them.
