Hamburger Steaks with caramelized onions, Baked Potatoes, Salad and Texas Toast. My go to meal, it gets me in and out of the kitchen on those busy week nights and my husband and son love it.

Hi Laura T,
Since you said easy, you can try browning the meat with a little onion and add it to macaroni and cheese.
Or you could take the same browned hamburger and use it for homemade tacos. That is also an easy recipe because you just need to chop up tomatoes, lettuce, etc. You can buy cheese that is already grated and some taco shells and there you go.

Bolongese sauce - begin by satueeing a chopped onion and a clove or two of garlic, then add hamburger, breaking it up and cooking until browned. Then just add a jar of your fave pasta sauce (or a large can of tomato sauce, basil, oregano, salt & pepper), and simmer until hot.
Put that over pasta and serve with a simple green salad. I like to top both with fresh grated Parmesan.

I have a new favorite recipe that will make you want to make it again and again.
1 lb hamburger
2 cups water
2 cups minute rice (the stuff that cooks in 5 minutes)
1 packet taco seasoning
2 cups shredded cheese (I love the mexican shredded cheese)
your favorite tortilla chips
lettuce, tomatos, salsa, and sour cream (basically your favorite taco toppings)
In a large frying pan, brown meat, drain, then return to pan.
Pour in 2 cups water and packet of taco seasoning. Heat until boiling.
Stir in 2 cups minute rice and sprinkle with shredded cheese (I usually use about 1 cup), lower temp to simmer. Simmer for 5 minutes.
To serve, we cover our plates with the lettuce (we shred it), chopped tomatoes, beef and rice mixture, salsa, and sour cream, then mix it all together with the chips. Makes a great taco salad! It's even better the next day as leftovers.

How about potato salad that's what my family usually have when we are BBQ
Potato Salad
4 lbs red potatoes
5 hard-boiled eggs, separated
1 teaspoon salt, divided
3 green onions, sliced
1 cup mayonnaise
2 tablespoons sweet pickle relish
1 tablespoon prepared mustard
1/2 teaspoon pepper
1/2 teaspoon celery seeds
Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool.
Peel potatoes and cut into 1 inch pieces.
Chop egg whites.
Stir together potato, egg whites, 1/2 t. salt and green onions.
Mash egg yolks;
add remaining 1/2 t. salt, mayo, pickle relish, mustard, pepper, and celery seed; stirring until well blended.
Gently stir into potato mixture.
Cover and chill 2 hours.

I am providing you with two different recipes that you can choose based on your individual tastes. Also, as a bonus, I am including two simple desserts you could make for the meal. My personal preference would be the lasagna!
Granny's Spaghetti Sauce
This is my own tried and true spaghetti sauce. It is very easy to make. Use it as a sauce for spaghetti or for a lasagna sauce
1 pound ground beef
Olive oil (enough to cover bottom of pan)
1 large onion
1 tsp dried green pepper pieces (or about 1/8 of a green pepper finely diced) - optional
1 rib of celery, finely diced
Mushrooms, canned/drained or fresh- optional
1 qt home canned tomatoes (or 1 large, 28 oz, can of crushed tomatoes with 1/3 cup water added)
1 small can tomato paste
Water (1/2 of a tomato paste can)
1 15-16 oz can tomato sauce
1/4 cup (or more) of a blend of Parmesan, Romano, Asiago cheeses (don't have it on hand, just use Parmesan cheese)
1 tsp Worcestershire Sauce
1 tsp salt
1/4 tsp pepper
1/4 tsp crushed red pepper (more if you like it hotter)
1 tsp sugar
1/4 tsp celery seed
1/2 tsp oregano
1/4 tsp basil
8-10 fennel seeds (count them out individually)
1/2-1 tsp garlic (use the amount you prefer) - I will also put in some minced garlic.
Brown ground beef. Once browned, put into a colander and drain off the grease and then just run a little hot water over it to get residual grease off the meat.
Saute the onion, green pepper, and celery in the olive oil. Once the onion is soft, add all of the other ingredients and stir well. Bring to a simmer, and cook about an hour or until it is as thick as you like. After about 10 mintues into the cooking, taste test it and see if you want more salt, garlic, Worcestershire sauce, etc.
Serve over spaghetti or use for lasagna sauce.
I don't like to make it in the crockpot, because the color gets too dark. Doesn't look as appetizing.
Serve with a tossed or Caeser salad and garlic bread or toast.

Hamburger Stroganof
1 lb hamburger
1-2 tbsp olive oil
8 oz fresh mushrooms or 1 small can of mushrooms (if you don't like mushrooms, leave out
1 small onion, chopped
salt and pepper to taste
1 tsp Worcestershire Sauce
1 pkg brown gravy mix
3/4-1 cup sour cream
Noodles
Add your olive oil to a pan and heat ups some. Add the onion and mushrooms. Saute until a light yellow in color and tender.
Meanwhile, brown your hamburger. Once browned, place in a colander and run just a little hot water over it to remove any excess fat. This won't affect the flavor. Add to the onions.
Mix up the brown gravy per the package directions. Add Worcestershire sauce and sour cream. Pour over ground beef, add salt and pepper, and simmer until it thickens.
While the beef mixture is thickening, cook some noodles.
To serve, plate the noodles and then top with the meat mixture.
Serve with a nice salad.

Cherry Delight for Dessert
1 graham cracker crust
8 oz cream cheese softened
1/3 cup sugar
1 tsp vanilla
1 can cherry pie filling
Cream the cream cheese and sugar. Add vanilla. Spoon into the pie shell. Top with cherry pie filling. Chill until ready to serve.

Pineapple Angel Food Cake
1- 18 ounce angel food cake mix (I prefer Duncan Hines)
1-20 ounce can crushed pineapple (do not drain)
1 package frozen topping, garnish
Preheat oven to 350 degrees. Spray a 9x13 pan with vegetable spray.
In a large bowl, combine cake mix with pineapple (with juice). Mix until well blended.
Pour batter into prepared 9x13 pan. Bake at 350 degrees for 25 min or until golden brown. Let cool.
Serve with whipped topping.

If you loose fry it with a little salt and dump in a jar of Prego spaghetti sauce and about 1/4 cup red wine, you will have an excellent spaghetti sauce that should get rave reviews. That with cooked spaghetti, a salad, garlic bread and a little desert should be really good.

Guys love burgers, so I'd stick with that. Make them fat and top them when cooking with Grill Mates Monterey Steak (seriously, this stuff will make him buy you a diamond), then finish them with lots bacon and cheese.
Make sure you buy buns that are sturdy enough to handle a big burger.

brown the lb. of hamburger
add 1/2 bottle of your favorite BBQ sauce
heat & stir until thoroughly mixed
Then place on buns for fast Sloppy Joes
*you can doctor the mix up more if you want
by adding onions, pickles, honey, mustard, etc.
serve with chips & dip, plus beverage

Get some peppers, rice and tomatoe sauce and make some stuffed peppers or Stuffed cabbage.
Meatloaf is also very easy , and goes great with potatoes.
