(serves 4-6)
200g dried chick-peas
4 large garlic cloves, peeled
7 tbsp extra-virgin olive oil
3 tbsp tahini
1 tbsp lemon juice
1. Place the chick-peas in a large bowl. Cover with water and leave to stand for at least 12 hours until they double in size.
2. Put the drained chick-peas in a saucepan and add twice the volume of water. Bring to the boil for 10 minutes.
3. Lower the heat and simmer for 1 hour, until the chick-peas are tender.
4. Drain the chick-peas. Put the olive oil, garlic, tahini and lemon juice in a food processor and blend until smooth. Add the chick-peas and blend until they are finely ground. If the mixture is too thick, add a little more olive oil.
5. Transfer to a bowl, cover and chill until ready to serve. To serve, drizzle with some olive oil, sprinkle a little paprika over and garnish with fresh coriander.
to plate:
serve over fresh greens, decorate with roasted red peppers. Side with pita bread or Melba toast

Eat this with crackers
HUMMUS
1 12-oz can garbanzo beans
1 clove garlic
2 tbsp extra virgin olive oil
2-3 tbsp tahini sauce (sesame paste)
juice of 1 small lemon
½ tsp salt
Drain 1/3 of the water from the can of garbanzo beans into a small bowl. Set aside for later use.
In a blender, mix together the garbanzo beans with the remaining can water and the rest of the ingredients.
Blend for 1-2 minutes until a smooth, slightly fluid paste is formed.
If desired, add small amount of the saved can water and blend to create a more fluid consistency.

the easiest way is to get canned garbonza beans, lemons juice , tahini (a nut paste- ask your local store for it), and olive oil. if u have a food processor mix it in there. if not you can mash the beans by your self- then follow by adding 1.5 tlb of tahini for every can of beans. u can also add garlis if u wish. eat it with pita bread, chips, tortillas, or on any veggies. it is also very good with tabboleh.

Basically, it's just chick peas with garlic & olive oil.
Mix it up in a blender, spread on crackers or bread.

i used canned garbanzo beans or black beans.
Blend with the water from can and add olive oil and adobo.
u can eat it with pita bread or with nothing..its delicious and healthy.
