I am having a photograph with some background. I wish to erase that back ground and put some plain back ground like blue or red screen? How to do that?

Use an image editing program like Photoshop. Select the subject using whatever tool works best. Copy it. Create another image of the background colour you want. Paste the subject from the first photo onto the second image.

It takes a program such as Photo Shop or one of that variety of program. It's not easy and it's hard to do seamlessly.
