BAKED FISH FILLETS
2 lb. fish fillets
1/3 c. mushrooms, sliced
2 tsp. lemon juice
1/2 c. Monterey Jack cheese
1/2 c. bread crumbs
1/3 c. green onions, sliced
1/4 c. butter, melted
Sprinkle green onions and mushrooms over the bottom of a greased baking dish. Place fillets on top. Cover with cheese and bread crumbs. Sprinkle with lemon juice. Drizzle with butter. Cover and bake at 350 degrees for 30 minutes.

If you like your fish on the spicy side, this is good:
5-7 Whiting Fillets, thawed
3/4 cup fresh orange juice
1 tbspn. fresh lemon juice
1 1/2 tbspn. fresh lime juice
1 1/2 tbspn. wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
1 tbspn. diced jalapeno peppers (If you don't like it spicy, use less or none of this ingredient according to your taste.)
1 tbspn. hot chili powder (Again, use less or none of this ingredient according to your taste.)
3 Cloves garlic, crushed
Preheat your oven to 450°. Combine juices, vinegar, garlic, jalapeno pepper, chili powder, salt, and pepper and let stand at room temperature for 3 hours (this is important for this recipe). Place the whiting fillets in casserole dish. Pour half of sauce over fillets. Cover and bake for 10 to 15 minutes. Heat remaining sauce to boiling and serve with fish.

Baked Perch or Whiting Filets
1 onion -- sliced, thinly
1/4 pound mushroom -- sliced, thinly
1 1/2 pounds perch fillet
1/4 cup chicken broth
1 cup fresh whole wheat bread crumbs
1 tablespoon dried parsley
Cover bottom of baking dish with sliced onion. Add layer of
mushrooms. Place fish fillets on top. Cover with bread crumbs, sprinkle with parsley. Pour broth over all. Bake at 350 degrees F. for 15-20 minutes or until fish just flakes with fork.
Pamalicous' Fish Sausage
4-6 Large Fillets of Whiting
Sage
1-2 eggs
salt
pepper
flour
frying oil

With a fork flake the "meat" off of the whiting into a chilled bowl. Add about 1/2 to 1 teaspoon of Sage..mix. Add salt, pepper and egg. Dredge in flour and fry till brown. Doesn't taste like salmon croquettes the sage gives it a 'sausagey' taste. Makes a GREAT Sandwich when thrown on a roll piping hot out the grease.
Pecan Crusted Fish Fillets
1 teaspoon olive oil
1 leek, cleaned and thinly sliced
1 shallot, peeled and minced
2 cloves garlic, crushed
1/2 cup coarsely chopped pecans
1/4 cup cooking sherry
4 (6-oz.) firm white fish fillets (I used whiting fillets)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons lemon juice
Preheat oven to 350°F. Line a baking sheet with aluminum foil and coat with vegetable cooking spray.
Heat a medium non-stick skillet over medium-high heat. Add oil and sauté leek, shallot and garlic until tender, about 5 minutes; set aside.
In another small skillet add pecans and sherry. Cook over medium heat until liquid evaporates, about 10 mintues; set aside.
Place fillets on prepared pan. Season with salt and pepper and drizzle with lemon juice. Place leek mixture on top of each fillet, covering entire surface. Spread pecans evenly on top of leeks. Bake for 8 to 10 minutes, or until fish flakes easily with a fork. Serve warm.

Baked Fish Dinner for Two INGREDIENTS 4 tablespoons olive oil, divided 2 baking potatoes, cut into 1/2 inch slices salt and pepper to taste 1/2 cup water 1/2 red bell pepper, chopped 1 leek, bulb only, chopped 1 zucchini, thickly sliced 2 stalks celery, cut into thin 3 inch long slices 4 cloves garlic, minced 1 pound white fish fillets 1 tomato, seeded and chopped 2 sprigs fresh parsley or fennel, for garnish DIRECTIONS Preheat oven to 425 degrees F (220 degrees C). Lightly oil a shallow, 2 quart baking dish. In a medium bowl, toss the potatoes with 2 tablespoons olive oil to coat evenly. Season with salt and pepper. Spread potatoes in baking dish with 1/4 cup water. Cover, and bake for 15 minutes. Combine bell peppers, leek, zucchini, and celery in a medium bowl. Toss with garlic and 2 tablespoons olive oil,. Season to taste with salt and pepper. Spread vegetables over potatoes, add another 1/4 cup water, and cover. Bake for 10 to 15 minutes. Rinse, and cut fish into 1 to 1 1/2 inch cubes, and spread over vegetables. Cover. Bake for 10 minutes, or until fish flakes easily. Serve with tomato and parsley or fennel garnish.

We love to fix whiting on our charcoal grill! Take a large piece of foil & lay fish in single layer in center of piece. Add a few cloves of garlic minced, a few pats of butter, chopped parsley & a few lemon slices. Seal pouch tightly, then grill over medium coals, turning with tongs til done - fish will flake when ready - check after 20 minutes.....Serve with wild rice & steamed carrots....Yummy!
