I tried first with my food processor and it almost burned the motor out. I prefer using my Kitchen-Aid mixer to mix pizza dough. (I had an off-brand stand mixer that threw dough all over the kitchen)

Mixer with a dough hook.
Even with a processor, you should still hand-knead the dough for a few minutes.

Find a new recipe that calls for you to mix by hand because if it calls for a dough hook than you are going to have put in a lot more effort without one. It's taking in account the fact that a mixer can go for longer periods of time and faster than a hand.

food processor with the plastic blade will work fine. Mine came with both the metal blade and plastic (or ceramic possibly) blade.
I have a stand mixer as well, but would use the processor.

I don't see why not. I make tortilla dough and dinner roll dough in the processor. If you have the plastic blade, use that.

2-3c of flour
a dash of salt
Right on the counter (cleaned of course)
