Sautee it in butter first so it is brown on all sides. While you are doing this you can add some spices -- cinnamon, allspice, cardamon and nutmeg. (The spices will give it good flavor. Perhaps 1/2 tsp of each.) Cover with water and cook until tender. When it's done you can make a gravy from the liquid. Melt 2 tbsp butter in a pan and whisk in 2 tbsp floor. Cook just until the "raw" taste of the flour has disappeared. Then slowly add the liquid that the lamb cooked in until the sauce thickens.

You can serve it over rice with steamed carrots or green beans. Some people serve salsa or chutney on the side.

This is not ideal for lamb. Since lamb is a ruminant animal, the meat marbles differently. Using a crockpot to cook it does not give good flavor. Instead marinade it in yogurt, curry powder, tumeric, basil, thyme, and rosemary. If you are insisted to use the crock pot, for a 2 pound roast, use chicken or beef broth for 2.5 hours. Finish it off on the grill and boil the broth. Reduce the broth with flour and a little sugar and when it is done grilling, pour this sauce over it.
