I am a former chef and worked in both Asia and Jamaica, I crack mine, drain the water, then put it in the microwave for 2 minutes, lift it out of the shell and use a carrot peeler.

The heat will loosen it and the peeler will remove the rest, grate it on a box grater or in a food processor.

I don't know if it is available, but some one has a patent for one!

After you've poked some holes inthe coconut, bake it in the oven for a while (20 minutes? 350degrees) and the meat should separate easily from the shell.

Use an electric wisk, just be cautious.
