Unless you're talking about adding ten pounds of dry yeast to two gallons of juice. Adding too much yeast doesn't matter. During fermentation, you siphon the wine into different containers to separate it from the sediment...including the yeast.

If you are using wine yeast, a small package is good for 5-6 gallons of wine. Adding more would only be good if the first yeast were damaged (wort too warm or cold to allow fermentation and killed the yeast). You can add a full pak to one gallon of wine. It is actually the amount of sugar that is added to the yeast that makes the difference in how your yeast acts!

A 1/3 to half a package for a gallon is max but if you are making 2 plus gallons a full package is OK. To much yeast causes the fermentation to go very quickly and can cause a bitter aftertaste.

the grapes have a certian amount of yeast on the skins to begin with.
you do not want bread yeast,,, it works,,, but smell it....
