What's good food to eat when it's almost a hundred degrees outside?

Hello:

I know exactly what you mean,it is going to be well over 96 degrees today,and NOTHING SOUNDS GOOD TO EAT!! :-( What I do when it is so hot and humid out is I go to our local grocery store and get meat sliced for cold turkey,chicken,or ham sandwiches,I will also get a cheese tray,fruit tray with fruit dip,salads such as potato,macaroni,pasta,etc... I also serve chips and dip,and for dessert I will serve either ice cream sandwiches,or ice cream with a variety of toppings to help us cool down.

I don't mind warm weather,but it is so hot here that everything in our yard is dying especially our flowers because it is so hot and we haven't gotten any rain yet!! :-( Do you know what the scary part is? We had such a mild winter that now that now we are going to have a very hot and brutal summer and technically,summer hasn't even gotten here yet,YIKES!! :-(

I like to cook on the BBQ when it's hot out so it does not heat up the house too much. You could pair something cool, like coleslaw or pasta salad to go with whatever you are making. Then have ice cream for dessert, or if you are on a diet you could make some fruit sorbet.

Grilled Chicken and Pasta Salad

INGREDIENTS

4 skinless, boneless chicken breast halves
steak seasoning to taste
8 ounces rotini pasta
8 ounces mozzarella cheese, cubed
1 red onion, chopped
1 head romaine lettuce, chopped
6 cherry tomatoes, chopped

DIRECTIONS

Preheat the grill for high heat. Season both sides of chicken breast halves with steak seasoning.

Lightly oil the grill grate. Grill chicken 6 to 8 minutes per side, or until juices run clear. Remove from heat, cool, and cut into strips.

Meanwhile, place the rotini pasta in a large pot of lightly salted boiling water. Cook 8 to 10 minutes, until al dente. Drain, and rinse with cold water to cool.

In a large bowl, mix together the cheese, onion, lettuce, and tomatoes. Toss with the cooled chicken and pasta to serve

Grill some chicken breasts & make an entree salad. Use a variety of greens & veggies. Depending on your mood you can make it Asian by adding mandarin oranges, almonds & using a sesame ginger dressing. If you prefer Italian, add some black olives, marinated artichoke hearts & use Italian dressing. Season the chicken accordingly while grilling.

Cucumber yogurt drink

1. Add cucumber, yogurt/buttermilk, salt, mint, pepper
2. Blend and serve

IF YOU HAVEN'T... YOU MUST TRY! IT IS DELICIOUS! ~'Taco Salad'~
Ingredients: Hamburger meat, ranchstyle beans,shredded cheddar cheese,fritos,lettuce, tomatoe,onion,black olives(drain),avacado.
1.Brown hamburger meat in skillet;drain fat.
2. Cut up lettuce,tomatoes,onions, and avacado.
3. Combine hamburger meat and ranch style beans (drain most of the juice off the beans) together in bowl.
4. Combine beans and meat in bowl with chopped lettuce,tomatoes,onions,avacado, olives, and shredded cheddar cheese.
5. Place desired amount of fritos on plate and top with salad mixture.
6. Add ranch dressing and enjoy!

cold sandwhiches....With a cold beer if you drink beer...lemonade is good also...Or Tea!!

also you can make the sanwhiches gourmet...get some good bread at your bakery..good meats and I love Fontina cheese..and you could use pesto instead of mayo or mix the 2...taste great...Pepperchinis (sorry spelling) and whatever garden trimmings you like and enjoy...don't forget the chips as an option...

If it's hot I always make a salad... full of all kinda yummy veggies and add chicken strips, croutons, bacon bits... It's filling but NOT hot..LOL
