I dont know if you've tasted it or seen it, but bakeries here in the UK tend to use a gorgeous thick cream in their cream buns / doughnuts. Its not fresh cream or too sweet, it tastes just right. Its called immitation cream or something, but I cant find it anywhere. Can anyone help? ;0)

It could be buttercream, or a custard, of sorts. I know that a lot of bakeries use immitation buttercream, as you mention that in your question. Although buttercream is usually used as a frosting where I frequent, it can be, and has been often used as a filling. I would think it is a type of custard, most likely, however.

The bakery down the street only uses buttercream. And they're very famous for it. It kind of sounds like what you're looking for.

I heard that it is made from lard - the same thing that is used in filling Twinkies, etc. Bad for you............
