I need someting easy to put together, not that timeconsuming and maybe something that doesn't have to be served hot.

Oriental Sesame Slaw


Terrific combination of Cabbage, Carrot and Jicama with a deliciously different dressing!


8-10 Servings

Ingredients:

1 Head green cabbage thinly shredded
1 Large carrot shredded
1C. Jicama shredded (peel off skin before shredding)
1 Tbsp. Black sesame seeds (optional)
1C. Mayonnaise
2 Tbsp. Rice vinegar
1 Tbsp. Sesame oil
3 Tbsp. Honey


Put shredded cabbage, carrot, jicama and sesame seeds in large bowl. In separate bowl mix mayonnaise, vinegar, sesame oil and honey, add to cabbage mixture and chill for at least 4 hours before serving.

Marinated Tomatoes
Serves 8


3 tablespoons chopped fresh parsley leaves
1 tablespoon sugar
1 1/2 teaspoons garlic salt
1 1/2 teaspoons seasoned salt
1/2 teaspoon ground pepper
3/4 teaspoon dried thyme 3/4 cup vegetable oil
1/2 cup white or golden balsamic vinegar
2 to 3 green onions, chopped
4 to 6 large tomatoes, each cut into 6 wedges

Combine all ingredients, except tomatoes, in a large measuring cup or mixing bowl. Whisk well. Place tomatoes in a resealable plastic bag and pour marinade over. Marinate at room temperature for up to 2 hours, turning the bag occasionally.

Spinach and Strawberry Salad

"This salad has lots of spinach, lots of fresh, sliced strawberries, and a delicious, sweetened oil and vinegar dressing spiked with poppy and sesame seeds."
INGREDIENTS:
2 bunches spinach, rinsed and
torn into bite-size pieces
4 cups sliced strawberries
1/2 c. sliced almonds, pecans, candied walnuts etc.
1/2 cup vegetable oil
1/4 cup white balsamic vinegar 1/2 cup white sugar
2 tablespoons sesame seeds
1 tablespoon poppy seeds

DIRECTIONS:
1. In a large bowl, toss together the spinach, nuts and strawberries.
2. In a medium bowl, whisk together the oil, vinegar, sugar,sesame seeds, and poppy seeds. Pour over the spinach, strawberries, and nuts and toss to coat.

Stuffed pepper (for 8-13 peppers)

1. Take 1 onion, chop and heat in cooking oil on a skillet
2. Take about half a pound minced meat and add to the onion
3. Add 1 teaspoon cinnamon powder, I tea sp. Garlic paste and same amount of ginger
4. add salt and vinegar
5. Add a cup of water, cook for about 30 minutes
6. Boil 1 and a half cup of rice for 10 minutes and drain
7. mix the rice with the minced meat and cook in low-medium heat for 10 more minutes
8. Add 2 tomatoes/ketchup/puree
9. Add cilantro, and about 2 teaspoon of mayo in the entire thing (do not overdo the mayo)
10. Take the top of the pepper and take out the seeds. Heat up the grill or the oven to 350 F.
11. Stuff the pepper with the rice and meat mix
12. Put the top back on and grill for 3-5 minutes (be careful, it burns easy)

Fruit Salad. Or homemade coleslaw. KFC Coleslaw

8 cups finely chopped cabbage (about 1 head)(or 2 bags of precut)
1/4 cup shredded carrot (1 medium carrot)
2 tablespoons minced onion
1/3 cup granulated sugar
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons white vinegar
2 1/2 tablespoons lemon juice

Be sure cabbage and carrots are chopped up into very fine pieces
Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk,
vinegar, and lemon juice in a large bowl and beat until smooth.
Add the cabbage, carrots, and onion, and mix well.
Cover and refrigerate for at least 2 hours before serving.
Serves 10-12.

What about soda or beverages.

Bruchetta! I have a very easy recipe that I came up with on my own. You will need:

-French Baguette( for 30 people you probably need a few)
-Fresh Roma Tomatoes (I use about 1-1.25 lbs. per loaf)
-Newmans Light Basalmic Vinaigrette Dressing (1/2 bottle per 1-1.25 lbs. of tomatoes)
-Basil (I don't even use fresh basil)
-Butter
-Garlic Powder


1. To make the bread for the Bruchetta, slice the baguettes.
2. Melt butter in microwave with a little bit of garlic powder and spread on the bread slices.
3. Bake on cookie sheet until golden brown. ( I usually set oven to 375 or so)
4. Cut up Roma tomatoes.
5. Mix in bowl with Newmans Basalmic Vinaigrette dressing and add some basil.
6. You can serve on a platter with the tomato mixture separate from the bread so that the bread doesn't get soggy. Just put a serving spoon in the bowl with tomatoes.

Your friends and neighbors will love it! Very simple and pretty cheap!

baked beans are probably the easiest. Buy a few large cans
of baked beans and put them in a roastinh pan or something like that. Add some cooked bacon, some ketchup and mustard and some karo syrup and heat them up and you're good to go. Beans can be eaten hot or cold even though hot is best.

I must say it is easy to make, most time consuming bit is
skinning the potatoes after they are cooked.

CURRIED EGG SALAD

28 eggs
8 sticks celery
16 shallots
12 tablespoons chopped parsley
24 thin slices square white bread
240g butter
12 tablespoons grated Parmesan cheese
lettuce leaves

4 medium onions
240g butter
4 tablespoons curry powder
2 cups mayonnaise
4 tablespoons lemon juice
2 cups cream
salt, pepper

Boil eggs and shell when cold.
Put thinly sliced celery, chopped shallots and parsley into bowl, mix well.
Remove crusts from bread, cut each slice into 3 rounds using 4cm cutter.
Put rounds on to oven tray, brush each side with melted butter; sprinkle over Parmesan cheese.
Bake in moderate oven for 10 minutes or until golden brown; cool.
Line serving plates with lettuce leaves.
Put halved eggs on one side of the plate, spoon celery mixture beside eggs, then put bread rounds next to celery mixture.
Refrigerate until ready to serve.
Offer curry mayonnaise separately

Heat butter in pan, add peeled and finely chopped onions, saute gently until onion is transparent; add curry powder, cook 1 minute; allow to become cold.
Combine onion and butter mixture with mayonnaise, lemon juice, salt and pepper.
Beat cream until soft peaks form, fold into mayonnaise mixture.

You could always make corn salad, because it can be made in advance and it's really simple!!!!
here's one recipe that i have:
2 cans corn or baby corn
1 bag frozen peas (optional)
2 peppers sliced
2 tsp salt (a little less)
1/3 cup vinegar
1 purple onion diced
1/2 cup sugar
1/4 cup oil

mix all together and marinate

I make this when I need something fairly fast.

Betty Crocker Suddenly Salad-classic- probably 3 boxes for thirty people.

Follow directions on back
Then I just cube sharp cheddar and mozzerella cheese and add.
a can of garbanzo beans-probably a couple in this case
You can add really anything. sometimes I put cubed ham in and olives.
I also add parmesan cheese on top.

Quick and Easy Dip

Serve with corn tortilla chips. serves 35

INGREDIENTS

3 (16 ounce) cans refried beans
3 (8 ounce) containers sour cream
3 (8 ounce) jars medium salsa
5-3/4 cups shredded Cheddar-Monterey Jack cheese blend

DIRECTIONS
Spread the refried beans on the bottom of a casserole dish. Layer the sour cream, salsa and shredded cheese into the casserole dish.
