Yes God is all powerful and all knowing
God doesnt have a mind like we do.
Since God is not a human, His knowing is not the same as ours either.
God does not change His mind, He only changes the amount of mercy and the amount of compassion and the amount of test a man receives on earth, depending on the mans behaviours.
Thus, God is patient and waits. At times He saves His wrath to another day, and at times it is said that He saves it for the afterlife, which will be ten times worse than any punishment youll receive here for acting evil.
But otherwise, God does not change His mind, He changes the way humans receive His gifts and blessings during the course of their stay on earth, and that depends on how they treat each other and how they aknowledge the Creator.

Easy. Your argument commits a very basic logical fallacy. You state that if he is all-knowing, he would not have the capacity of changing his mind. Then you state that if he is all powerful he would have the power to change his mind. Unfortunately for you, your first assumption is false. You can be all-knowing and have the capacity to change your mind, you merely would never need to. That is different than not being able to. Being all-knowing and all-powerful actually go hand in hand. God does not need to change his mind BECAUSE he is all-knowing and all-powerful. Nice try, though.

He is absolutely omniscient and omnipotent. There is no contradiction there, at all. As far as God changing His mind - you'd have to give me a concrete example of where God changed His mind in order for us to discuss that specific event. In my own life, God has only "changed direction" on me one time. He said "no" to something in my life, but then after I was the one who did the changing, so I could handle the situation that I was asking Him to have, did He release me, and tell me then that it was O.K. For example - you say know to a 5 year-old when he asks for the keys to the car. Yet, when that same kid grows up, turns 16, takes his driver's ed courses, and passes, and proves to be a responsible adult, then, when he asks for the keys again, you "change your mind" so-to-speak, and give him the keys.

whatever Natural Force we want to call God
has not the limitation of the body and mind we have
