Because you will have to provide official transcripts. Usually these go directly from your school to the one where you are seeking admission, so you have no opportunity to handle them or falsify them. If your papers are late in arriving, you may be granted provisional admission based on what you tell them, but if the supporting documentation, when it arrives, contradicts what you have told them, kiss your academic career good-bye, forever.

If you are seriously considered as an applicant, they will contact your references. If you say you were a personal assistant to the President of IBM when you were actually mopping floors for the company, they can find out, and they will.

Most of what appears in college essays is not confirmed
by the readers, but references to a student's GPA, test scores, community service, etc. may well be, particularly if they do not "ring true". But, a student would have to be both dishonest and incredibly foolish to lie on his/her essays. Not only would the college receiving the essay deny admission to the student, but the student's high school might be notified, causing counselors and teachers to be very reluctant to recommend him/her to colleges, employers, etc.

By the way, a student attending a college can be dismissed if it is discovered he/she was not honest during the admissions process. I've seen it happen.

For lots of reasons, honesty is still the best policy.

I presume that you reference your previous educational institution: the "graders" would contact the school.
The remainder of your essay would be measured against known standards and enrollment criteria.
