Stuffed pepper (for 8-13 peppers)

1. Take 1 onion, chop and heat in cooking oil on a skillet
2. Take about half a pound minced meat and add to the onion
3. Add 1 teaspoon cinnamon powder, I tea sp. Garlic paste and same amount of ginger
4. add salt and vinegar
5. Add a cup of water, cook for about 30 minutes
6. Boil 1 and a half cup of rice for 10 minutes and drain
7. mix the rice with the minced meat and cook in low-medium heat for 10 more minutes
8. Add 2 tomatoes/ketchup/puree
9. Add cilantro, and about 2 teaspoon of mayo in the entire thing (do not overdo the mayo)
10. Take the top of the pepper and take out the seeds. Heat up the grill or the oven to 350 F.
11. Stuff the pepper with the rice and meat mix
12. Put the top back on and grill for 3-5 minutes (be careful, it burns easy)

Blueberry Cream Cheese Tarts

2 (8-ounce) packages cream cheese, softened
1 cup sugar
1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21-ounce) can blueberry filling, or other pie filling

Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a muffin pan.
Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Place a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with blueberry filling on top, or pie filling of your choice.

That's a huge open-ended question.
A lot depends on your preferences.
The simplest meals are pasta based.
There's an endless variety of shapes.
Just place in a pot of water & simmer.

Plain sauces come in cans or bottles.
They can be augmented with meat, veggies, etc.
I usually start with some sauteed onions.
Add sweet or hot peppers to taste.
Possibly some sliced mushrooms.

Brown some ground round or sausage.
Then add the sauce, & bring to a simmer.
These can be served together on a plate.
Or mixed in a casserole & baked in the oven.
Sprinkle with parmesan or cheddar cheese.

Milk Chocolate Candy Bar Cake

2 1/2 cups flour
1/4 teaspoon salt
2 sticks butter, softened (or margarine)
2 cups sugar
4 eggs
12 oz. milk chocolate chips
1 cup chocolate syrup
1/4 teaspoon baking soda
1 cup buttermilk
2 teaspoons vanilla

Grease and flour tube pan. Sift together the flour and salt. In a bowl, cream butter and sugar. Add 4 eggs one at a time, mixing between each addition. Melt chocolate chips; add chocolate syrup. Mix soda and buttermilk and add to butter, sugar and egg mixture. Blend in flour, then chocolate mixture and add vanilla. Pour into prepared pan and bake for two hours at 300 degrees F.

Icing:
1 1/2 cups sugar
1 cup evaporated milk
1/4 stick butter (or margarine)
6 oz. milk chocolate chips
1 teaspoon vanilla

Put sugar, evaporated milk and butter in a saucepan over medium heat and bring to a boil. Boil 10 minutes. Add chocolate chips and vanilla. Beat until smooth and well mixed. Spread or pour over cooled cake.

Artichoke Parmesan Chicken Pasta


Ingredients
1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
1 Tbsp. olive oil
Salt and pepper to taste
1 jar Artichoke & Parmesan Sauce
1 Tbsp. butter (optional)
1 lb. prepared spaghetti
Grated Parmesan cheese

Directions
Saute chicken in olive oil until done; season with salt and pepper. Add Artichoke & Parmesan Sauce and butter, if desired; heat through. Toss mixture with prepared spaghetti. If needed, adjust consistency with water from pasta. Serve with Parmesan cheese. Makes 4-6 servings.

CURRIED PEA SOUP

500g packet frozen peas
60g butter
3 tablespoon flour
2 teaspoons curry powder
4 cups water
3 chicken stock cubes
1/2 cup cream or milk
2 tablespoons chopped mint
salt, pepper

Drop peas into boiling salted water, reduce heat, cook until tender.
Drain, push peas through sieve or blend in blender.
heat butter in Pan, add flour and curry powder,stir until combined, remove pan from heat.
Gradually add water, stir until combined.
Return pan to heat, add crumbled stock cubes, stir until soup boils and thickens.
Reduce heat, add pureed peas, cream or milk and mint; mix well.
Simmer, uncovered, 5 minutes.
Season with salt and pepper
Serve with wholewheat bread with a selection of cold meats and ham.

Cheesy Tuna Melts serves 8

INGREDIENTS

1 (6 ounce) can tuna, drained
1/3 cup chopped celery
2 tablespoons mayonnaise
1 pinch salt
4 English muffins, split and toasted
8 slices ripe tomato
8 slices Cheddar cheese

DIRECTIONS

Preheat oven to broil.
In a bowl, mix together tuna, celery, mayonnaise and salt. Spread tuna mixture onto the toasted muffin halves and place them on a baking sheet. Top each half with a slice of tomato and a slice of cheese.
Broil until cheese is melted, about 3 to 5 minutes.

Fettuccini Alfredo With Sausage serves 2

INGREDIENTS

8 ounces dry fettuccine pasta
1/2 pound sweet Italian sausage, casing removed
1/2 cup butter
1 cup heavy whipping cream
5/8 cup Locatella cheese
3 tablespoons chopped fresh parsley

DIRECTIONS

In a large pot with boiling salted water cook fettuccini until al dente. Drain.

In a large skillet cook sausage until brown. Drain and set aside.

To make the Alfredo sauce, melt butter in medium saucepan over low heat. Add heavy cream and Locatella cheese and cook, stirring frequently, until mixture comes to a soft boil. If desired, add parsley.

Pour Alfredo sauce over fettuccini noodles and top with the cooked sausage.

Serve immediately as sauce will separate upon cooling.

INGREDIENTS

1-2/3 cups white sugar
1-1/3 cups packed brown sugar
1-1/3 cups butter
2-3/4 eggs
2/3 cup chocolate syrup
1 tablespoon and 1 teaspoon vanilla extract
2-2/3 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 tablespoon and 1 teaspoon baking soda
2 tablespoons and 2 teaspoons peanut butter chips
2-2/3 cups semisweet chocolate chips


DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a medium bowl, cream together the white sugar, brown sugar and butter. Stir in the eggs and vanilla until well blended, then stir in the chocolate syrup. Sift together the flour, cocoa and baking soda, stir into the chocolate mixture until just combined. Finally, stir in the peanut butter chips and chocolate chips.

Drop by teaspoonfuls onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Remove to cool on wire racks.
