I bought a bulk size bag of lettuce to make salads for myself and my child care business. I didn't realize that there was so much in the bag and now I'm afraid that it will go bad before I can use it all. It would be a shame to waste all that lettuce. Does anyone know of any recipes or suggestions that I could use to prepare other meals or food with the left over lettuce?

Here is a GREAT way I store my lettuce and it lasts SO much longer..... Wash the lettuce, tear larger pieces in half. Then I place the lettuce in a colander over a towel and let it air dry COMPLETELY. You will need to occasionally toss it up a bit so all pieces dry. Then take a large ziplock type storage bag and line the inside with a couple paper towels, place dry lettuce in between towels and seal. My lettuce stays fresh and crisp for well over a week this way!

PS. I also store cut celery and fresh herbs this way to prolong their shelf life

****** You should store the shredded lettuce this way as well. Just omit the washing process. The paper towels help to wick away moisture from the lettuce which will make a huge difference in how long it lasts*******

If the lettuce came in a bag prewashed you have a good 7 - 10 days before it goes bad. Believe me, I know. If you have to use the lettuce put it on everything for the kids. Make "crabby patties", they have lettuce on them. They will like that. Also make lettuce wraps. I love an Asian lettuce wrap, but kids would like it with any flavors, expecially if they get to prepare the wrap they like. Perhaps a chicken tender or finger and let them put ketchup or mayo on it. You might be able to introduce some shredded carrots or nuts on it.

Use the lettuce as a garnish on plates of appetizers in order to dress up the presentation. Put it around the edges of the plate and then put the actual dish in the middle. This works particularly well with things like chicken fingers or meat plates. The lettuce CAN be eaten, but it's not meant to be.

Lettuce and Tarragon Soup
* 1/4 cup unsalted butter
* 2 leeks, chopped
* 1 clove garlic, finely chopped
* 4 cups chicken broth
* 2 teaspoons salt
* 1 head lettuce - rinsed, dried, and chopped
* 1/4 cup chopped fresh tarragon
* salt and pepper to taste

DIRECTIONS

1. Melt the butter in a medium saucepan over medium heat. Place leeks and garlic in the pan and slowly cook and stir 10 minutes, or until tender and lightly browned. Mix in the chicken broth and salt. Reduce heat and simmer approximately 15 minutes.
2. Increase heat to medium low and stir in the romaine lettuce. Cook 5 minutes. Stir in the tarragon. Remove from heat.
3. In a blender, blend the soup until smooth.
4. Return soup to the saucepan and warm over medium heat. Season with salt and pepper to taste.

You could make tacos, you could use the large lettuce leaves as wraps for grilled chicken. Just don't feel pressured into making green salads everyday.

You can't really cook with lettuce, and you can't freeze it. Be a good neighbor and give some away. Build a few good karma points.

Put it on sandwiches. Or tacos. There's not a whole lot you can do with lettuce. . .except salads.

take the leaves and stuff them like you would do to stuff cabbage.

cut up a head of lettuce and boil it add chicken stock and other veggies it make a great soup.
