It all depends on what fruit you want to put on a fruit tray. There are no "rules" for this.
I would suggest, Strawberrys, grapes, kiwi, cantelope melon, and mango* :) these fruits won't "brown" like a banana would or perhaps an apple would*
Whatever Fruit you choose.......Will work just fine*

Go for seasonal. You should also consider texture, color, and preparation size. Also, don't be surprised if people avoid fruits that have pits or seeds (unless they are removed first). One more consideration: don't select fruits that will brown or deteriorate easily unless you know it will be eaten quickly OR you plan to brush them with lemon juice to reduce oxidation.
