The "lady" referred to in the last stanza of your poem is Jimmy's wife.
(The "mum" in second stanza is Jenny's mother -- because the last 4 lines in the stanza are Jenny's answer to Jimmy's first 3 lines in same stanza where he asks "Tell me love what do you say?")
So again the "lady" is Jimmy's wife.

Good question. First he indicates his "mum in disarray". We could assume it's his mother as he mentions her in the next line.
Then he apologizes "if my lady should discover". That could mean his "mum" is his wife. And "mother" his mom.
I think it's his mother. It just makes sense.
