I would express my gratitude and drink both the cup they bought for me and the one that I bought for myself. Where I work, I am one of the few people that drink the strong Italian roast coffee.
We all tend to ascribe to some sort of "equity theory" in our "exchange relationship." If somebody buys me coffee, I am obligated to buy them coffee at a later time. It can be awkward, from time to time, but it all balances out in the long run.

Say thank you to them and drink the coffee. If you don't feel like drinking it, sneak into the toilet quietly and pour the coffee into the sink. Make sure you don't get caught though.
If you want to be polite, give the coffee to other colleagues. I'm sure they'll be pleased by your generosity.

say thanks and drink them both. next time pre arrange that you will take turns bringing the coffee for each other. at my job every saturday was coffee and donut day and the 8 staff would take turns getting the coffee and donuts. it worked out really good.
