Give thanks for some of the things that have gone on in the year...the camaraderie, successes, good health....then give thanks for the meal and the good company.

My favorite is:

Bless us oh Lord, and these thy gifts which we are about to receive from thy bounty, through Christ our Lord. Amen.

Then again, if this is for athletics, you could try to keep it in line with what the athletes would say after winning a game (you don't want to use big words and confuse them):

Uh, yeah, I'd like to thank God, and uh, my family, and uh, without God, none of this would be possible. We did it! Thank you God!

Use a generic one, that refers to God, not Christ or Mohammed - unless of course it is a religious school.
Give thanks for all your team/school has accomplished this year and any individual accomplishments.
Pray for the health and well being of the team, families, school, and country.
