You almost have to eat the seeds, otherwise ther will be nothing left of the eggplant. I like the oriental type because , they are less bitter.

Yes you can. I grow the green eggplants as they contain less seeds.

Sure! The large ones can be on the bitter side, so pick small eggplants.
