stove top tuna casserole, but you have only touched the surface of what you can have for dinner.....try enchalidas, fajiatas, have breakfast for dinner(lots of us do not eat breakfast at breakfast time and lots of us like to eat it later in the day)......try a salad, or do something different to the things you are tired of...
tacos dont have to be with beef, pork, or chicken try using fish or shrimp
burritos ...see above or try a veggie burrito (my husband loves them)
try using your your tortillas to make a wrap....sort of a sandwich but rolled up
instead of using the usual toppings for pasta (marinara sauce or alfredo sauce) try pesto, or some other easily made sauce and try using a different meat than ground beef....like chicken, pork, shrimp/crab
and as far as chicken there are as many ways to fix it as there are packages in the store....marinate it and either cook in over, or grill(outside or inside)...go to campbells.com and there is a great recipie for a chicken and rice dish that is to die for (with several variations)
general idea if youre bored with what youre eating get some new recipies or change to a different restrauant(lol)

Tonight I'm making what I was suppose to make last night. My daughter earned some money and wanted to get a couple of new Webkins, so we ended up eating out. So tonight, I'm making pork chops and hominy. My mom made this dish when I was a kid and I have no idea where she got the idea from. Tomorrow we're doing burgers and corn on the cob.

Well, my mom made chicken curry for dinner but i'm a vegitarian. So she bought corn, pinto beans, and brown rice and steamed the rice and beans and mixed it all together. Then she put soysauce on top and it was so good. You could also have some chips and dip. Or, if you feel lazy, a grilled cheese (my fav.).I hope that I help you make up your mind!

I'm going to take some chicken breasts - butterfly them (slice them down the middle), pan sear the outside - then stuff the middle of the breasts with wilted spinach (garlic and oil of course) and a little swiss cheese- finish in the oven. A simple salad of romaine, cucumber, tomato, and goat cheese -lemon vinaigrette.

tonight i made parmesan pork chops which is relatively simple. take italian style bread crumbs, an egg and either fresh parmesan or the kind that comes in the shaker and make a station or 3 bowls. bread crumbs in one, egg in the 2nd and parm in the 3rd. lightly coat the chops in the bread crumbs dip in the egg and then in the parmesan. put a little olive oil in a skillet and then cook the chops on one side until brown and then turn and cook on the other side. i served it with pasta and red sauce and sauted brussel sprouts. delicious and simple.

-grilled cheese (or grilled tuna)
-a big salad with either meats or cooked meat
-ciabatta bread with meat and cheese baked in the oven
- a homemade nacho (put chips, beans, meat, salsa nad cheese then bake/broil it, but sour cream and guacamole on top.. mmm)
-hamburger/hot dog
-potato salad
