French cut green beans with slivered almonds is beautiful!

Wild rice is easy and delish but looks impressive.

Twice baked potatoes are also really tasty too.

And if you bake rolls - even better. Joy of cooking has great recipes.

Good luck!

How about a nice mixed green salad with blue cheese and walnuts, and potato leek cassarole. Both are easy will be wowed.

for the casserole just peel as many potatoes as you need (I recommend yukon gold or red potatoes) and slice into 1/4 inch rounds, place in a well buttered dish and add leeks (or onions), salt and pepper. Dot the top with pats of butter and pour over heavy cream to cover potatoes. Bake in a 350 oven for an hour. Garnish with chives.

You could go with the classic steak house sides of creamed spinach and roasted/baked potatoes or

grilled vegetables (zucchini, yellow squash and red onion) and pasta alfredo.

Recipes for all of these are available on my two favorite "go to" web sites,

www.gourmet.com and www.foodnetwork.com

This is my recipe. I will post a link so you can check out all my shared recipes if you like.

Roasted Garlic Mashed Cauliflower

4 servings
1 hour 10 min prep
1 head cauliflower, cut into florets
2 teaspoons hot sauce
2 tablespoons garlic, roasted
1/4 cup 1% low-fat milk, as required
1/2 teaspoon salt
1/4 cup potato flakes (optional)
1/2 teaspoon black pepper
1 tablespoon margarine

Roast garlic in 350 ovens for about 40 minutes, covered with foil.
Bring large pot of water to a boil.
Add a dash of salt.
Boil cauliflower for about 7-10 minutes or until completely cooked through but not mushy.
Drain well.
(You can steam the cauliflower if you prefer, I do).
In food processor or blender, add drained cauliflower and remaining ingredients.
Puree only until smooth adjusting consistancy with a bit of extra milk or potato flakes as needed. The potato flakes are optionaland give it just enough of that "potato" flavor to make it nice.

OR, keep it simple.

Grilled Asparagus With Lemon & Mint

2 lbs fresh asparagus
1 cup olive oil
1/4 cup lemon juice
1 teaspoon mint leaves, crushed
salt and pepper, to taste

About 30 minutes prior to grilling, combine olive oil, lemon juice, and mint.
Brush fresh asparagus with olive oil marinade and allow to sit.
Heat up grill and place asparagus on grill with tongs.
Sprinkle with salt and pepper and cook for about 5-7 minutes.
Serve immediately.
