Easy Banana Bread

1/3 cup Vegetable Shortening
3/4 cup Sugar
2 medium Bananas - sliced
2 cups Flour
1 tsp. Vanilla
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Salt
3/4 cup Sour Cream OR-
1 cup milk w/1 Tbsp. Vinegar, mixed

Preheat oven to 350 degrees F. In a large bowl, mix shortening, sugar and bananas.
Mix dry ingredients in another bowl, then add to banana mixture, alternating with sour cream (or milk); mix well. Pour into large loaf pan, which has been sprayed with non-stick cooking spray. Bake 50 - 60 minutes at 350 degrees Fahrenheit.

Note: This recipe may be doubled or tripled. This recipe freezes well.

One Egg Banana Bread
This banana bread recipe is easy, using one egg and one bowl.

INGREDIENTS:
* 3 large bananas , well mashed
* 1 egg
* 1 stick of butter, melted
* 1 1/2 cup of flour
* 1 cup of sugar
* 1 teaspoon of salt
* 1 teaspoon of baking soda
* 1 cup nuts, optional

PREPARATION:
Mix all ingredients in a mixing bowl; put into a well greased loaf pan. Bake at 350° for about 60 minutes, or until a knife inserted in middle comes out clean.

"This really is the best banana bread I have ever tasted. Very moist and it freezes well. I also bake this in 3 small loaf pans however you may need to shorten the baking time."

Original recipe yield:
1 - 9x5 inch loaf

INGREDIENTS
2 eggs, beaten
1/3 cup buttermilk
1/2 cup vegetable oil
1 cup mashed bananas
1 1/2 cups white sugar
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped pecans (optional)

DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.
Blend together the eggs, buttermilk, oil and bananas.
Sift together the sugar, flour, baking soda and salt. Add to banana mixture and stir in pecans. Mix well.
Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.

The Best Banana Bread

Can also make 3 mini-loaves

8-10 servings
1-2 loaves
1½ hours 10 min prep

3/4 cup butter, softened
1 1/2 cups sugar
3 bananas, blackened
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 cups flour
3/4 teaspoon salt
1/2 cup buttermilk
1/2 cup mini chocolate chips

Cream butter and suger (by hand or mixer).
Mash bananas and add by hand to creamed mixture.
By hand add eggs, vanilla, baking soda, flour and salt.
Gently stir in buttermilk and chocolate chips.
Pour into a greased loaf pan.
Bake at 350 for 1 1/4 hour or until it tests done with a toothpick.
**I find that coursely mashing bananas is best and make sure they are over ripe for best flavor.
I also find that doing the majority of the mixing by hand makes for better texture in the end.
**Even though the recipe says it makes 1 loaf, I usually use 2 loaf pans or 3 mini loaf pans because it seems to yield a moister bread.
Just adjust baking time down.
**if you do not have buttermilk you can put 1 tsp.
vinegar into a 1/2 cup measuring cup and fill to top with milk.
Let rest 5 minutes before adding to recipe.
**This freezes well.

Banana Bread

INGREDIENTS:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed banana, about 2 large or 3 small bananas
1 1/2 cups bran cereal
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1/2 cup coarsely chopped pecans or walnuts
PREPARATION:
In a bowl, stir together the flour, baking powder, baking soda, and salt; set aside.
In a mixing bowl, combine mashed bananas and bran cereal. Let stand for a few minutes, until cereal is softened.

In a large mixing bowl, beat butter and sugar together. Beat in eggs; mix well. Mix in banana mixture. Stir in flour mixture and chopped pecans or walnuts. Spread batter in a greased and floured 9x5x3-inch loaf pan. Bake at 350° for about 55 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Let cool in pan for 10 minutes; remove to rack to cool completely

1 cup sugar 2 1/3 flour 1/2tsp vanilla 1/2 cup walnuts 1/3 cup veg.oil 3eggs 3ripe bananas mix all ingredients together and bake on 350 for 1 hour

I'll let others give you recipes, but I have never tasted a bad banana bread. They are all good unless they are under or overbaked.
