all of this can be measured how you want it & made to your taste...certain ingredients can be taken out also, if desired

chopped hard-boiled eggs
mayonnaise of choice
mustard (regular or dijon/spicy)
sweet pickle relish (optional)
chopped celery
chopped green onion
dill weed seasoning
salt*, pepper & garlic salt (or powder) to taste

*Morton's makes a salt substitute that tastes exactly the same & is better for you. It's especially good for people with salt-restricted diets. It's made of potassium chloride instead of sodium chloride.

I keep it simple with some chopped green onions and celery and then add the mayo (miracle whip) and top the bun/sandwich with salt/pepper to individual taste. I've also added shredded cheddar cheese to the egg salad too - that's yummy if your in the mood for cheese.

Others will give you some good recipes, but for change, try using hot or warm hard boiled eggs instead of cold. I really like that for a sandwich.

My favorite is hard-boiled eggs, Helmann's mayo, Texas Pete, salt and pepper. The Texas Pete gives it a kick, but not too much.

Miracle Whip-Blech! (personal opinion, sorry!)

Anyway, here's a link to several recipes for egg salad:

Here's a UK version (Egg and Cress):

My favorite way is hard boiled eggs diced up, mixed with some good mayonaise (Hellman's is ok), a little dijon mustard, some fresh parsley, a little salt and fresh black pepper. I prefer the basics when it comes to egg salad.

Hope I helped some....Enjoy!

Chop up your boiled eggs add mayonnaise to taste, add sweet pickles and chopped onion. Salt and Pepper and chill.Unless you like it warm. It tastes better to me cold. Hope this helps.

Egg Salad with a Kick

INGREDIENTS

1-1/2 eggs
2 tablespoons fat-free mayonnaise
2 tablespoons light sour cream
3/4 teaspoon Chinese hot prepared mustard
1/2 stalk celery, finely chopped
2-1/2 pimento-stuffed green olives, chopped
1-1/2 teaspoons sweet pickle relish
1/8 teaspoon paprika
1/2 pinch red pepper flakes
salt and pepper to taste

DIRECTIONS

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 15minutes. Drain hot water, and run eggs under cold water to chill. Crack shells by rolling on the counter, and peel.

Place eggs in the container of a food processor, and briefly pulse to chop. Transfer the eggs to a medium bowl, and stir in the mayonnaise, sour cream, Chinese mustard, celery, olives, and relish. Season with paprika, red pepper flakes, salt and pepper.

Taste, and adjust seasoning to your liking.
