1] grab the feet from behind the same time you grab the neck or front.
2] tuck nearest wing into your chest, and put arm up and over other wing.
3] give them a little treat after you handle them, so they learn to like it [ the treat, not you ]

I like to walk up behind them and hold their wings down and tuck them under my arm so their feet just kind of hang there...once you have them in a firm grip and talk soothingly to them, the majority of the time they calm down...but then, most of my birds are used to being picked up. You have to do this repeatedly before the get used to it and stop fighting you.
