What is the difference between total fat, trans fat, saturated fat, and unsaturated fat on the nutrition labels listed on the back of food packages?

Bottomline fats are not actually bad for your diet/health, it comes down to the type of fat. Good rule of thumb, if the fat is solid or partially solid at room temperature, it is not good for you and you should seriously limit your intake of these types.

the difference is in how the body uses them, some are more readily stored, others are more readily burned and utilized. Transfats and saturated fats are ALWAYS STORED they are responsible for weight gain and clogged arteries, while unsaturated fats are more likely to be burned and utilized in metabolism. Restrict ALL fat intake to 30% of your total dietary intake.
