You can never go wrong with ice cream. How about getting the nacho chips with cinnamon to round out your theme? Of course, as an appetizer, use nacho chips with red and green salsas and dipping cheese. My fave is the white kind.

I'd suggest Betty Crocker's microwavable, chewy giant cookies... just add water and pop them in the microwave. Then, add huge scoop of vanilla ice-cream and drizzle hot fudge (comes with the cookie pack) over it. You can pick from her different flavors to suit each tastebud.
Or pure ice-cream. Pick a good brand (Ben & Jerry's - okay not cheap, but oh-so-worth-it, lol - Dreyer's... etc etc) and go crazy with crushed nuts, strawberry, chocolate syrup, fresh fruit toppings... the list goes on!
Another suggestion for dessert - blueberries or strawberries with powdered sugar on the side, and whipped cream.
Or a fondue... melt some good quality dark chocolate over a pan of boiling water, and chop up your own fruits (bananas, berries ...) and marshmellows to dip. Lovely!
Mmmm I'm getting hungry.... ;)

Frozen yougurt pie
1 prepared pie shell (nilla wafer, oreo, or graham cracker)
2 containers of 8oz yougurt ( whatever flavor you prefer)
1 12 oz container of cool whip
Step 1
Combine yougurt and cool whip with spoon or whisk. You can also fold in fresh fruit if you wish.
Step 2
Empty mixture in pie shell and put in freezer.
Step 3
Take out of freezer 15-20 min before you want to serve the pie.
Tastes great very easy. Good luck. Have a taco for me!

My favorite is Watergate Salad:
1 can crushed pineapple w/juice
1 box Pistachio pudding mix
3 cups mini marshmallows
1 1/2 cup nuts (whichever you prefer)
Mix all in a bowl and stir. It is the best!
You could also do a strawberry shortcake which is also a fav of mine:
Angel Food Cake
Strawberries
Sugar
Whip Cream
I usually get a couple of pieces of the angel food cake and put the rest on top. Soo good and now sooo hungry!!!

I make this frozen yogurt pie that is so good & easy.
Just buy a graham cracker pie crust
Large tub of cool whip
2 yogurts (single serving size) any flavor you want. Strawberry is basic and very good.
Mix the yogurt & cool whip together, pour into pie crust and freeze. Tastes like an ice cream pie and goes with anything. Slice some fresh strawberries on top for decoration and serve.

Delicious served hot or cold. You could half the recipe and just make enough for 4, or make enough for left overs, and enjoy.
Sopapilla Cheesecake
2 cans crescent roll dough
2 packages cream cheese
1.5 cups sugar
1 stick of butter
1 tsp vanilla
1 tsp cinnamon
spray a 9x13 pan with non stick spray, spread out 1 package crescent roll dough and pinch to close any wholes.
Cream together 1 c sugar, vanilla and cream cheese. Spread on top of crescents.
Spread the second can of crescent on top of the cream cheese, doing the same with the wholes.
Melt the one stick of butter and take off heat, add the 1/2 cup sugar that remains, and the cinnamon. Stir, then pour on top of the crescents, move the pan around so that the butter mixture evenly coats the dough.
Bake at 350 degrees for 30 minutes. Delicious!

Pistachio pie. It'll cool the heat from the spice in the tacos.
1 Keebler graham crust
1 (15 oz.) can crushed pineapple, slightly drained
1 package pistachio pudding mix
1 container of Cool Whip
Mix the pineapple and pudding mix and let sit for 10 minutes. Fold in the Cool Whip, then dump in the crust and put it in the fridge for 4+ hours.
Cool and creamy! And good!

I have an easy non-fried version of Fried Ice Cream that I like to serve with Mexican food.
Finely crush 2 cups Cinnamon Toast Crunch cereal and stir in 1/2 tsp cinnamon.
Form balls of vanilla ice cream and roll them in the cereal until well coated. Freeze the balls for 2 hours or until ready to serve.
Top with a drizzle of honey, chocolate syrup, and whipped cream.
Enjoy!

Crockpot Peach Cobbler
Ingredients:
3/4 cup biscuit mix
1/3 cup granulated sugar
1/2 cup brown sugar, packed
3/4 cup evaporated milk
2 teaspoons butter, melted
2 eggs
2 to 2 1/2 cups peeled sliced peaches, fresh or frozen, thawed
2 teaspoons vanilla extract
3/4 teaspoon cinnamon
Prep:
Lightly butter a slow cooker.
In a large bowl, combine sugars and baking mix. Add eggs and vanilla. Stir to blend. Pour in butter and milk and stir. Mix in peaches and cinnamon, until well mixed.
Pour into the slow cooker. Cover and cook on LOW setting for 6 to 8 hours or on High for 3 to 4 hours. Serve warm with heavy cream or vanilla ice cream.

* 25 g Caster Sugar

Method:
* Cook berries with sugar and orange juice in a saucepan for 8 minutes.

Makes:4 servings 4 bone-in chicken breasts (1 1/4 lb) 1/2 cup shredded smoked Gouda or Swiss cheese (2 oz) 1/4 teaspoon ground nutmeg 1 package (10 oz) frozen chopped spinach, thawed, squeezed to drain 1/2 teaspoon salt 1/4 teaspoon pepper 2 teaspoons butter or margarine, melted 1. Heat oven to 375°F. Grease 9-inch square pan. Remove bones from chicken breasts. Do not remove skin. Loosen skin from chicken breasts. 2. In medium bowl, mix cheese, nutmeg and spinach until well blended. Spread one-fourth of mixture evenly between meat and skin of each chicken breast. Smooth skin over breasts, tucking under loose areas. Place chicken, skin sides up, in pan. Sprinkle with salt and pepper; drizzle with butter. 3. Bake uncovered 45 to 55 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
