I grew up in army world I am dating a sailor and well they boys are all talking about a master cheif is that an E9 or E8 also what do you call them? in the Army their called Sargent Major always never anything less I am hearing some sailors call this guy cheif is that a disrespectful term or is it cool in the navy to use that or are they talking about someone else all together when they say cheif, just trying to keep up with the conversation.

E-7 = Chief
E-8 = Senior Chief
E-9 = Master Chief
Most of the time you call an E-7 "Chief" an E-8 "Senior" and an E-9 "Master chief".

One thing I'm surprised everyone left out regarding your question "Sailors how do you refer to the E9 in the navy?", was THE E9 in the Navy. The MCPON himself. He is the highest ranking enlisted person in the Navy. MCPON is Master Chief Petty Officer of the Navy. There is only one. He has his very own rank insignia. Where a chief has an anchor, a senior chief has an anchor with a star over it and a master chief has an anchor with 2 stars over it, the MCPON has 3 stars over that anchor. Even though he's not an officer, you would do well to address him as SIR! out of respect.

E8s are Senior Chiefs, commanly addressed as "Senior"
E9s are Master Chiefs. They are addressed as Master Chief..
there are also E9s that are the Command Master Chief. They are sometimes called CMC.

Senior, and Master Chief. I think it is the same for the USCG as well. I think for an E-9 some have a special pay. Not sure if there is an E-10.

A Navy E-9 is a Master Chief Petty Officer. Formally, one would also include his RATING: eg Aviation Warfare Systems Operator Master Chief Petty Officer (AWCM). "Master Chief" is the "common usage".
E-8 is Senior Chief Petty Officer, and is called Senior Chief or just "Senior"
E-7 is a Chief Petty Officer is commonly called "Chief" or the three-letter combo of their rating and rate: AWC or BMC or GMC or HMC... etc :P

These guys are right, but they all left off the one piece of the rank structure. While those of us in the military refer to them as Chief, Master Chief, etc. what they left off was that they are actually call Chief Petty Officer (CPO for short from E7 on up to E9. There is no E10. And if you see three E7's walking towards you do not refer to them as 3-CPO's (had to throw in a star wars jab at my naval brethren)
