The twelve constellations of the Zodiac mark out the path through the stars which the Sun follows through the year.

Of course you plot it by marking where in the sky the Sun is, then looking at what stars are there exactly 12 hours later when it is dark.

It is reckoned to have been first made by the Phoenicians about 2400 BC - there is a thing called the Precession of the Equinoxes which enables this date to be estimated quite accurately.

The Phoenicians were the master mariners of the ancient world, and they could use the Zodiac to navigate at night and when out of sight of land, because it cut the horizon exactly at the points where the Sun would rise and set. You only needed to see a few of its constellations to work out where the whole belt lay, so it was much better than the modern way of finding the Pole Star.

The astrological uses of the Zodiac for telling people's fortunes came along much later.

While the Greek zodiac has some ties to astronomy (although astrology is definitely not a science), the Chinese zodiac has nothing to do with astronomy, and you would be better off asking this question in the culture section.
