What I saw in my head as I read it was a Gold or Yellow Dragon holding a Salmon.. The dragon stands for Vitality, Strength, and Stamina, and the Salmon of Wisdom for wisdom.. (The salmon of wisdom is found in many myths from many traditions)

A tree comes to mind when I think of symbols for all of those things. Trees have long symbolized life, endurance, and wisdom across times and cultures. "With its branches reaching into the sky, and roots deep in the earth, it dwells in three worlds- a link between heaven, the earth, and the underworld, uniting above and below. It is both a feminine symbol, bearing sustenance, and a masculine, visibly phallic symbol- another union."
