It may seem cliche, but Holst's "The Planets" still blows me away, even though I've heard it untold numbers of times over a period of decades.
For Sarah R -- "Night on Bald Mountain" was written by Mussorgsky. (Though his original composition was never performed during his lifetime. After his death his friend Rimsky-Korsakov put together the orchestral arrangement that is familiar to us today.)
