I'm sort of a medium to sharp cheddar or Monterey jack or mozzarella fan. Anything a little more gourmet?

For a plain grilled cheese, I like medium cheddar. If you are putting stuff with it, I love a good Canadian Swiss or Havarti.

Gruyère.is a good choice, so is brie cheese! Muenster cheese is really delicious and it melts great, as does a nice smoked Gouda..
actually, if I just had to pick one, it would be the smoked gouda!
